Hi, I'm Bre, the baker behind it all.
Raised in the country, I grew up cooking from scratch and learned early that nothing compares to homemade. Baking has always been my creative outlet, from childhood days in the kitchen with my mom and grandmother to now sharing that same joy with my daughter.
This bakery is deeply rooted in family tradition. Inspired by the women who came before me โ my great grandmother, my grandmother, and my mom โ I'm proud to carry their legacy forward through recipes passed down and ones I've created myself.
To me, baking is about more than sweets and breads โ it's about bringing people together. I'm honored to share a piece of that homemade goodness with my community, one baked good at a time.
Every great sourdough bakery has a starter with a personality. Ours is named Chaos โ bubbly, wild, and the secret behind our signature tang. Chaos works hard so every single bake rises right.
Because every bake is a small act of gratitude โ for family, for recipes passed down through generations, and for neighbors who gather around good food.
New to sourdough? Here's why this old-fashioned way of baking is worth every bit of the fuss โ and why we named our starter Chaos.
A starter is a living culture of flour and water, home to wild yeast and friendly bacteria captured right out of the air. Fed regularly, it bubbles, grows, and becomes the engine that makes sourdough rise โ no packaged yeast needed. Every starter is unique to its kitchen, which means no other bakery's bread can taste quite like ours.
Most breads use commercial yeast for a fast rise. Sourdough ferments low and slow โ often 12 to 24 hours โ while the culture develops complex, tangy flavor you simply can't rush. That long fermentation also breaks down gluten and starches, which many people find makes sourdough easier on the stomach and gentler on blood sugar than ordinary bread.
A starter is basically a pet: it has to be fed fresh flour and water on schedule, kept at the right temperature, and watched closely. Building a strong one from scratch takes weeks of daily care. Bre has kept Chaos happy, bubbly, and thriving through it all โ every loaf and roll you taste is the payoff of that daily devotion.
Bre's cooking up ways to bring a little Blessed Loaf magic into your own kitchen. Keep an eye out for these!
Weekend-morning pancakes with that signature sourdough flavor โ just add the wet ingredients and flip.
A little piece of Chaos to call your own! Revive it at home and start baking your own naturally leavened goods.
Message Bre to reserve your cinnamon rolls, cookies, and loaves for Saturday or Sunday pickup at 7 Soccio Street.
